  • 3 medium sweet potatoes
  • ⅓ cup melted unsalted butter (or coconut oil for a dairy-free option)
  • 1.5 teaspoons cinnamon
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ⅓ cup maple syrup
  • ⅓ cup chopped walnuts
  • 1 teaspoon thyme

Instructions

  1. Preheat your oven to 200°C (400°F). Clean and slice the sweet potatoes into ½-inch rounds.
  2. In a bowl, combine sweet potato slices with melted butter, 1 teaspoon cinnamon, salt, and pepper until well coated.
  3. Spread the slices on a baking tray in a single layer and bake for 25–30 minutes until fork-tender.
  4. While roasting, mix maple syrup, walnuts, remaining cinnamon, and thyme in another bowl.
  5. Once sweet potatoes are tender, add 1 teaspoon of the walnut-maple mixture onto each slice and return to the oven for an additional 8–10 minutes until caramelized.
  6. Let cool slightly before serving.
