3 medium sweet potatoes
⅓ cup melted unsalted butter (or coconut oil for a dairy-free option)
1.5 teaspoons cinnamon
½ teaspoon salt
½ teaspoon pepper
⅓ cup maple syrup
⅓ cup chopped walnuts
1 teaspoon thyme
Instructions
Preheat your oven to 200°C (400°F). Clean and slice the sweet potatoes into ½-inch rounds.
In a bowl, combine sweet potato slices with melted butter, 1 teaspoon cinnamon, salt, and pepper until well coated.
Spread the slices on a baking tray in a single layer and bake for 25–30 minutes until fork-tender.
While roasting, mix maple syrup, walnuts, remaining cinnamon, and thyme in another bowl.
Once sweet potatoes are tender, add 1 teaspoon of the walnut-maple mixture onto each slice and return to the oven for an additional 8–10 minutes until caramelized.
