  • 50 g natural cocoa powder
  • 230 g unsalted butter (roughly cubed)
  • 4 large eggs (room temperature)
  • 150 g granulated sugar
  • 100 g brown sugar
  • 100 g all-purpose flour
  • 250 g mascarpone cheese (cold)
  • 200 g whipping cream (cold)
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons espresso powder
  • 150 g hot water
  • 12 ladyfingers
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. Melt chopped chocolate and butter over low heat until smooth.
  3. In a bowl, whisk together eggs, granulated sugar, and brown sugar until light and fluffy. Fold in the melted chocolate mixture.
  4. Sift cocoa powder and all-purpose flour into the wet mixture, folding gently until just combined.
  5. Pour batter into the prepared pan and bake for about 30-35 minutes or until a toothpick comes out with moist crumbs. Let cool completely.
  6. Mix espresso powder with hot water until dissolved, then dip each ladyfinger briefly into this mixture.
  7. Beat cold whipping cream until soft peaks form, then fold in mascarpone cheese, powdered sugar, and vanilla extract.
  8. Layer soaked ladyfingers over cooled brownies, spread mascarpone cream evenly on top, and dust with cocoa powder.
  9. Refrigerate for at least one hour before slicing into squares.
