  • 2 cups Red Cabbage, shredded
  • 2 medium Carrots, julienned
  • 1 Red Bell Pepper, thinly sliced
  • 1 Cucumber, thinly sliced
  • 2 Green Onions, chopped
  • ¼ cup Cilantro, chopped
  • ½ cup Roasted Peanuts, roughly chopped
  • 3 tablespoons Peanut Butter (creamy)
  • 2 tablespoons Soy Sauce (low-sodium)
  • 3 tablespoons Lime Juice, freshly squeezed
  • 1 tablespoon Honey or Maple Syrup
  • 1 teaspoon Sesame Oil
  • 1 clove Garlic, minced
  • 1 teaspoon Ginger, freshly grated
  • 12 teaspoons Sriracha or Chili Sauce (adjust to heat preference)
  • 12 tablespoons Water (to thin the dressing as needed)

Instructions

  1. Prepare the vegetables by shredding green and red cabbage and julienning the carrots. Slice the bell pepper and cucumber thinly. Combine in a large bowl with green onions and cilantro.
  2. In a separate bowl or jar, whisk together peanut butter, soy sauce, lime juice, sesame oil, minced garlic, grated ginger, honey (or maple syrup), and sriracha. Add water gradually until you achieve desired consistency.
  3. Drizzle the dressing over the vegetable mixture and toss well before serving. Reserve roasted peanuts to sprinkle on top for added crunch.
