  • 2 tbsp butter (plus extra for bread)
  • 1 tbsp olive oil
  • 1 shallot (finely chopped)
  • 2 cups sliced mushrooms (Portobello, Cremini, or Shiitake)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices of bread (Rye, Sourdough, or Artisan)

Instructions

  1. Heat a dry skillet over medium heat. Add sliced mushrooms and cook for 5–7 minutes until moisture evaporates.
  2. Stir in butter, olive oil, and shallots; sauté for another 5 minutes until mushrooms are golden brown.
  3. Add thyme and balsamic vinegar if using; season with salt and pepper to taste.
  4. Butter one side of each slice of bread. On the unbuttered side, layer Swiss cheese, mushroom mixture, and another slice of cheese before topping with another slice of bread (buttered side facing out).
  5. Cook in a skillet or panini press for about 2–3 minutes per side until golden brown and cheese is melted.
