  • ¾ pounds fresh sea scallops
  • Juice of 2 lemons
  • Zest and juice of 1 orange
  • Juice of 1 lime
  • Juice of 1 ruby red grapefruit
  • 1 large garlic clove (crushed)
  • 1 jalapeño (seeded and thinly sliced)
  • 4 radishes (thinly sliced)
  • 2 tablespoons red onion (diced)
  • 2 tablespoons red bell pepper (diced)
  • 1 tablespoon fresh cilantro (chopped)

Instructions

  1. Clean the scallops by removing any small muscle attached to them. Slice each scallop in half lengthwise.
  2. In a medium bowl, mix together the lemon juice, orange zest and juice, lime juice, grapefruit juice, crushed garlic, sliced jalapeño, radishes, red onion, bell pepper, and chopped cilantro.
  3. Add the prepared scallops to the marinade, ensuring they are well coated. Cover tightly and refrigerate for at least four hours.
  4. When ready to serve, gently stir the ceviche and taste for seasoning. Garnish with extra cilantro before plating.
