  • 2 cups gingersnap cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping
  • 1 cup pumpkin puree
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 1/2 cups cold milk
  • 1 cup whipped topping
  • 1/4 cup chopped pecans
  • Extra gingersnap cookie crumbs for garnish

Instructions

  1. For the crust, combine gingersnap cookie crumbs and melted butter. Press into the bottom of a 9×13-inch baking dish and refrigerate.
  2. For the cream cheese layer, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped topping and spread over the crust.
  3. For the pumpkin layer, whisk together pumpkin puree, pudding mix, spices, and cold milk until thickened. Spread over the cream cheese layer.
  4. Top with remaining whipped topping and garnish with chopped pecans and extra cookie crumbs.
  5. Chill for at least 2 hours before serving.
