  • 1 cup pumpkin puree
  • ¾ cup unsalted butter (room temperature)
  • ½ cup brown sugar
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. In a small saucepan over medium heat, cook pumpkin puree for about 10 minutes until reduced to about 2/3 to 3/4 cup. Let it cool.
  2. In a large bowl, cream together room temperature butter, brown sugar, and granulated sugar. Mix in cooled pumpkin puree and vanilla until smooth.
  3. In another bowl, whisk flour, cornstarch, baking soda, salt, and pumpkin pie spice. Gradually add dry ingredients to wet ingredients until just combined; fold in chocolate chips.
  4. Scoop dough into balls and place on a lined baking sheet. Chill in the freezer for at least 30 minutes.
  5. Preheat oven to 350°F (175°C) and bake chilled dough balls for 10-12 minutes. Allow cooling on the baking sheet before transferring to a wire rack.
