  • 300g dark chocolate, chopped
  • 3 large eggs
  • 250g granulated sugar
  • 120g all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup chopped pistachios
  • 227g white chocolate, finely chopped
  • 120g heavy cream
  • 3 tablespoons pistachio paste

Instructions

  1. Preheat the oven to 335°F (170°C) and line a 9-inch square baking pan with parchment paper.
  2. In a mixing bowl, whisk eggs and sugar until pale. Melt butter and dark chocolate together; combine with egg mixture.
  3. Stir in vanilla extract and fold in flour and salt until just combined. Gently mix in chopped pistachios.
  4. Pour batter into prepared pan and bake for 20–25 minutes until slightly cracked on top. Cool completely.
  5. For ganache, heat cream until bubbling; pour over white chocolate and let sit before stirring in pistachio paste.
  6. Allow ganache to cool then spread over cooled brownies.
