  • 1 tbsp vegetable oil
  • 11 ounces chicken sausage (sliced)
  • 1 yellow onion (diced)
  • 2 carrots (peeled and cut into half-moons)
  • 1 garlic clove (minced)
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 5 cups chicken broth
  • ¼ head savoy cabbage (cored and chopped)
  • 3 tbsp cheese spread (at room temperature)
  • 12 pierogi (cheese and potato filling)
  • 3 tbsp chopped fresh dill
  • freshly ground black pepper

Instructions

  1. Prep all ingredients: slice chicken sausage, dice onion, mince garlic, chop carrots and cabbage, and chop dill.
  2. Heat vegetable oil in a large pot over medium heat; sauté chicken sausage until browned (about 5 minutes). Remove and set aside.
  3. In the same pot, sauté garlic, onion, and carrots until softened (about 3 minutes). Stir in paprika and cumin.
  4. Add chicken broth; bring to a boil. Add chopped cabbage, cover, reduce heat to medium-low, and simmer for 10 minutes.
  5. Stir in cheese spread until combined. Increase heat; add pierogi to the boiling broth and cook until they float (3-8 minutes depending on if they are fresh or frozen).
  6. Turn off heat; return the sautéed sausage to the pot along with chopped dill. Season with black pepper to taste.
