  • 1 1/2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • 3/4 cup Buttermilk
  • 1/4 cup Water
  • 1 1/2 teaspoons Vanilla Extract
  • 2 1/4 teaspoons Almond Extract or additional Vanilla extract
  • 1 1/2 teaspoons Apple Cider Vinegar
  • 200 grams (1 cup) Sugar
  • 1 stick (4 oz) Salted Butter (at room temperature)
  • 1/4 cup Vegetable Oil
  • 1/4 cup Light Corn Syrup
  • 1 large Egg(s)
  • 2 Egg Whites
  • 1/4 teaspoon Cream of Tartar
  • Strawberry Compote (for filling)
  • Vanilla Bakery Buttercream Frosting

Instructions

  1. Preheat the oven and gather all ingredients at room temperature.
  2. Whisk together flour, baking powder, baking soda, salt, and Clearjel (or pudding mix) in one bowl.
  3. In another bowl, mix buttermilk, water, vanilla extract, almond extract, apple cider vinegar, sugar, butter, vegetable oil, corn syrup, eggs, egg whites, and cream of tartar until smooth.
  4. Gradually combine the dry ingredients with the wet mixture until just combined; avoid overmixing.
