Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small white onion, finely diced
  • 1 large green bell pepper, diced
  • 1 (15-ounce) can diced tomatoes, with their juices
  • 1 tablespoon butter
  • 1 teaspoon Aleppo pepper
  • fine sea salt
  • freshly-cracked black pepper
  • 34 eggs
  • optional garnishes: sliced chives, chopped parsley, crumbled feta, sliced avocado

Instructions

  1. Heat olive oil in a large sauté pan over medium-high heat. Add finely diced onion and green bell pepper; sauté for about 5 minutes until softened.
  2. Reduce heat to medium and incorporate diced tomatoes with juices, butter, Aleppo pepper, salt, and black pepper. Stir and sauté for another 2 minutes.
  3. Crack eggs over the tomato mixture, allowing them to cook undisturbed for 1 minute. Gently break yolks and swirl into the mixture without fully combining.
  4. Cook until eggs reach desired doneness—traditionally soft and creamy.
  5. Serve immediately with optional garnishes like chives or crumbled feta alongside crusty bread.
