  • 1 1/2 lbs. boneless, skinless chicken thighs
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Optional: Chopped green onions for garnish

Instructions

  1. Cut chicken thighs into 1 1/2" cubes.
  2. In a bowl, whisk together ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang.
  3. Add half the marinade to the chicken cubes; mix well and refrigerate for at least 4 hours or overnight.
  4. Thread marinated chicken onto skewers. Preheat grill to medium heat.
  5. Grill skewers for about 20-30 minutes, turning every 3-4 minutes until cooked through (internal temperature of 165°F). Baste with reserved marinade during the last few minutes.
  6. Let rest briefly before serving; garnish with chopped green onions if desired.
