  • 69 tablespoons ice water
  • 2 large honey crisp apples, peeled and diced small
  • 3 tablespoons salted butter
  • 2 tablespoons brewed barley tea
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup raw or turbinado sugar (for sprinkling)

Instructions

  1. Prepare the crust by mixing flour, sugar, salt, and cold butter until crumbly. Add ice water gradually until it forms a dough. Chill for at least 1 hour.
  2. For the apple filling, cook diced apples with butter until golden brown; add tea, vanilla, cinnamon, and sugar. Let cool.
  3. Roast blackberries in the oven for enhanced flavor; then simmer with sugar and vanilla until thickened.
  4. Roll out chilled dough and cut into pumpkin shapes; fill with apple or blackberry mixtures.
  5. Assemble the hand pies by pressing edges securely and brushing tops with egg wash before baking at 375°F for about 25 minutes.
