Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 0.25 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1.5 cups jasmine or white rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • Fresh parsley (for garnish)
  • salt and black pepper (to taste)
  • 0.5 tsp garlic powder
  • 5 cloves garlic (minced)
  • 1 tbsp butter
  • 0.5 cup cream cheese (softened)
  • 0.5 cup grated Parmesan cheese
  • 1 tbsp butter (for creamy rice)
  • 1 tsp Italian seasoning

Instructions

  1. Cook the rice: In a large pot, bring jasmine rice and chicken broth to a boil, then reduce heat to low and cover for about 15 minutes until liquid is absorbed.
  2. Make it creamy: Stir in butter, heavy cream, cream cheese, mozzarella, and Parmesan into the cooked rice until melted and smooth. Season with salt, pepper, and Italian seasoning.
  3. Sear the chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and garlic powder. Cook until golden brown (12-15 minutes).
  4. Create the sauce: Push chicken to one side of the skillet; add butter and minced garlic. Sauté until fragrant, then mix in honey, soy sauce, and vinegar—let simmer until thickened.
  5. Serve: Spoon creamy rice onto plates topped with honey garlic chicken bites and garnish with fresh parsley.
