  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner's sugar
  • 2 tbsp milk
  • Purple gel food coloring
  • Black decorating frosting

Instructions

  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat room temperature egg whites on low speed until frothy. Add cream of tartar and gradually mix in sugar while increasing speed to high. Beat until stiff peaks form (about 5-7 minutes).
  3. Pipe small ghost shapes onto the lined baking sheet, then bake for 2 hours. Turn off oven and leave meringues inside for an additional 30 minutes.
  4. While meringues cool, prepare buttercream by mixing softened butter, confectioner’s sugar, milk, and purple gel food coloring until smooth.
  5. Frost cooled cupcakes generously with the purple buttercream, then top each with a meringue ghost decorated with black frosting.
