Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla until smooth. Scoop dollops onto a parchment-lined baking sheet and freeze for at least an hour.
  2. Cream together softened butter, brown sugar, and granulated sugar in a large bowl until fluffy. Mix in the egg and additional vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to wet mixture until just combined; fold in chocolate chips and Reese’s Pieces.
  4. Flatten tablespoon-sized portions of cookie dough in your palm, place a frozen cheesecake filling piece in the center, cover with more dough, and seal edges well.
  5. Bake on a parchment-lined sheet at 350°F (175°C) for about 12-14 minutes or until golden brown around edges.
