  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot (finely chopped)
  • 4 garlic cloves (minced)
  • ½ cup chicken broth
  • 1 can (14 oz) cherry tomatoes
  • 2 mozzarella balls (chopped)
  • Fresh basil leaves (for topping)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tsp dried basil
  • 2 tbsp tomato paste
  • Crushed red pepper flakes (for sprinkling)

Instructions

  1. Preheat the oven to 200 °C/400 °F. Season chicken fillets with salt, black pepper, garlic powder, and paprika.
  2. In a large ovenproof skillet over medium-high heat, heat olive oil and butter. Cook seasoned chicken for about 5 minutes per side until browned and cooked through. Remove and cover to keep warm.
  3. In the same skillet, sauté minced garlic and shallots until fragrant. Deglaze with white apple vinegar, scraping any browned bits.
  4. Add salt, black pepper, dried basil, and tomato paste; stir for one minute.
  5. Pour in chicken broth and add cherry tomatoes; bring to a boil then reduce to simmer for five minutes.
  6. Nestle cooked chicken back into the skillet and top with chopped basil and mozzarella cubes. Simmer for five more minutes until cheese melts.
