  • 3 cups freeze-dried strawberries
  • 1 cup salted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend freeze-dried strawberries into a fine powder.
  3. In a bowl, cream together the softened butter, granulated sugar, and vanilla until fluffy.
  4. Beat in the egg and gradually mix in flour, baking soda, strawberry powder, and salt until just combined. Fold in the strawberry jam.
  5. Roll dough into one-inch balls and place them on the prepared baking sheet.
  6. Bake for 8 minutes; gently flatten each cookie and bake an additional 2–3 minutes until lightly golden.
  7. For icing, mix cream cheese, powdered sugar, hot milk, vanilla, and remaining strawberry powder until smooth.
  8. Once cookies cool completely, dip or drizzle icing over each cookie.
