  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat; sauté diced onion and bell pepper until softened (about 3–4 minutes).
  3. Add chopped spinach; cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth; stir in Italian seasoning.
  5. Fold in sautéed vegetables and shredded cheese until well combined.
  6. Grease a 9-inch pie dish and pour in the mixture.
  7. Bake for 40–45 minutes until golden brown and set in the center. Let cool for 5–10 minutes before slicing.
