  • ⅓ cup light brown sugar
  • 2 tbsp instant espresso powder
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ cup unsalted butter (cold and cut into small pieces)
  • ¾ cup mini semi-sweet chocolate chips
  • 1 cup heavy whipping cream (cold)
  • 1 tsp pure vanilla extract
  • 1 large egg (room temperature)
  • 1 tbsp heavy whipping cream (for glaze)
  • 1 cup powdered sugar (sifted)
  • 1 tsp instant espresso powder (for glaze)
  • 1 tbsp brewed coffee (or espresso for glaze)
  • 12 tbsp milk or cream (or water for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, salt, and espresso powder.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in chocolate chips until evenly distributed.
  5. In another bowl, whisk together vanilla extract, heavy cream, and egg. Pour into dry ingredients and mix gently until just combined.
  6. Turn dough onto a floured surface, shape into an 8-inch circle, and cut into triangles.
  7. Chill for 30 minutes on the baking sheet before baking for 20-25 minutes until golden brown.
  8. While scones cool, mix together sifted powdered sugar, instant espresso granules, brewed coffee (or espresso), and cream (or milk) until smooth. Drizzle over cooled scones.
