  • 1 oz Parmesan cheese, finely shredded
  • 2 tablespoons fresh basil, torn

Instructions

  1. Preheat your oven to 425°F (220°C). Slice zucchinis in half lengthwise to create ‘steaks’ and score the flesh side with a crosshatch pattern. Sprinkle with salt and let sit for 15 minutes.
  2. In a skillet over medium heat, combine garlic, red pepper flakes, and 2 tablespoons of olive oil. Cook until fragrant (about 1-2 minutes). Transfer to a bowl.
  3. Pat zucchini halves dry and heat remaining olive oil in the skillet. Sear zucchini flesh side down until golden brown (about 2-3 minutes). Transfer to a baking sheet.
  4. Brush zucchini with garlic oil and bake for 8-10 minutes until tender. Top with mozzarella and Parmesan cheeses.
  5. Broil for an additional 2-3 minutes until the cheese is bubbly and golden.
