  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh parsley leaves, finely chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 2 garlic cloves, crushed
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon cooking salt or kosher salt
  • 2¼ cups plain flour (all-purpose flour)
  • 1 teaspoon baking soda (or substitute with 3½ teaspoons of baking powder)
  • ¾ teaspoon cooking salt or kosher salt
  • ½ cup plain yogurt (Greek or regular, full-fat and unsweetened)
  • ¾ cup full-fat milk (low-fat may be substituted)
  • 2 large eggs
  • 50 grams unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 small garlic cloves, crushed or grated

Instructions

  1. Preheat the oven to 180°C (350°F) and prepare a loaf pan.
  2. Mix chopped herbs, garlic, olive oil, and salt in a small bowl.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Combine yogurt, milk, eggs, melted butter, and garlic in another bowl.
  5. Mix dry ingredients with wet ingredients until just combined.
  6. Layer batter with herb mixture and cheese in the loaf pan.
  7. Bake for about 50 minutes until golden brown.
  8. Let cool before slicing.
