  • 2 large boneless, skinless chicken breasts
  • 1012 oz penne or rigatoni pasta
  • 4 garlic cloves, minced
  • 1 ½ cups heavy cream
  • ¾ cup freshly grated parmesan cheese
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 3 tbsp butter total
  • Salt & black pepper to taste

Instructions

  1. Season chicken with Cajun seasoning. Heat olive oil and 1 tbsp butter in a skillet over medium heat and sear chicken for 4–5 minutes per side until golden.
  2. Cook pasta in salted water until al dente; reserve ½ cup of pasta water before draining.
  3. In the same skillet, melt remaining butter over medium heat and sauté garlic for about 30 seconds.
  4. Whisk in flour to make a roux; cook for one minute.
  5. Slowly add heavy cream while whisking until smooth, then stir in parmesan cheese until melted.
  6. Season sauce with smoked paprika, salt, black pepper, and optional red pepper flakes.
  7. Toss drained pasta in the sauce, adding reserved pasta water as needed for consistency.
  8. Slice chicken and serve atop the pasta with chopped parsley and extra parmesan.
