  • 1 tablespoon olive oil
  • 1/2 tablespoon granulated sugar
  • 1 minced garlic clove
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 cups farro, cooked
  • 1/2 cup feta cheese (optional)
  • 1/2 cup pine nuts
  • 1/4 cup mixed fresh herbs (parsley, chives, oregano)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons sparkling grape juice vinegar
  • 1 1/2 tablespoons honey
  • 2 garlic cloves, finely minced or crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup olive oil, extra virgin

Instructions

  1. Preheat oven to 400°F (200°C). Toss halved tomatoes with olive oil, sugar, garlic, salt, pepper, and thyme on a baking sheet. Roast for about 30 minutes until soft.
  2. Cook farro according to package instructions; fluff with a fork once done.
  3. In a bowl, whisk together lemon juice, grape juice vinegar, honey, garlic, salt, pepper, and olive oil for the dressing.
  4. Combine roasted tomatoes and farro in a large bowl. Add feta (if using), pine nuts, and herbs; pour dressing over and toss gently.
  5. Serve warm or chilled.
