  • 2 lemons, sliced into thin rounds
  • 1 pound mahi mahi fillets
  • 2 tablespoons melted butter
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped parsley for garnish

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Line a rimmed baking sheet with aluminum foil and arrange lemon slices on it.
  3. Place mahi mahi fillets on top of the lemon slices and brush with melted butter.
  4. Mix together all spices and season both sides of the fish generously.
  5. Bake for 10 minutes; then broil on high for an additional 1-1/2 minutes until golden.
  6. Garnish with chopped parsley and serve immediately.
