  • 2 cups apple cider
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar for spiced topping
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it’s about 2 tablespoons.
  2. Beat cream cheese with sugar and vanilla until smooth for the filling.
  3. Cream butter with sugars, then add egg yolks and reduced cider.
  4. Mix dry ingredients separately; combine with wet ingredients.
  5. Scoop dough onto parchment paper, fill with cheesecake mixture, and cover with more dough.
  6. Bake at 350°F for approximately 11 minutes until golden around the edges.
  7. Brush warm cookies with melted butter and sprinkle spiced sugar on top.
