  • 8 oz cooked chicken breast
  • 2 1/2 cups cauliflower florets
  • 1 chopped carrot
  • 1 1/2 tbsp grated ginger
  • 1 small chopped onion
  • 2 minced garlic cloves
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tsp dried mint
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat one tablespoon of olive oil in a pot over medium heat. Sauté chopped onion and minced garlic with turmeric and black pepper for about 2-3 minutes until fragrant.
  2. Add cauliflower florets and 2 cups of chicken broth (or salted water). Cover and cook on medium-high heat for around 7 minutes until cauliflower softens.
  3. Stir in grated ginger, chopped carrot, and dried mint; continue cooking for another 5 minutes until tender. Blend the soup halfway using an immersion blender for texture.
  4. Incorporate cooked chicken, adjusting consistency with an extra cup of broth if desired. Simmer for an additional 5-6 minutes before serving.
